Vi proponiamo questa salsa dolce da abbinare a budini di riso, panna cotta, ricotta o simili ma che potrete utilizzare anche per guarnire una fetta di pandoro o di panettone. La presenza della marmellata di lamponi e dei canditi la rende adatta anche per una colazione diversa dal solito: tutto l’alcool degli ingredienti infatti sfumerà in fase di cotture, così da rendere la crema delicata e leggera.

The presence of raspberry jam and candied also makes it suitable for a breakfast different from usual: all the alcohol of the wine will vanish during cooking, so as to make the cream delicate and light.
Ingredienti Ingredients
(per circa 1/2 chilo di crema): (about 1/2 pound of cream):
1 bottiglia di Chianti Cantine Bellini 1 bottle of Chianti Cantine Bellini
un vasetto di marmellata a jar of jam of
di lamponi o di fragole (da 250 gr) raspberries or strawberries (250 gr)
100 gr di uva passa 100 gr of raisin
50 grammi di scorza d’arancia candita 50 grams of candied orange peel
50 grammi di scorza di cedro candita 50 grams of candied cedar peel
50 grammi di pinoli 50 grams of pine nuts
1 cucchiaio di fecola di patate 1 tablespoon potato starch
1 bicchierino di Maraschino a little glass of Maraschino liqueur
Preparation:
Boil the wine in a saucepan over medium heat until it is reduced to about 1/3 of the original volume, add the soaked and drained raisins, the candied orange and the cedar, the pine nuts and the jam.
As soon as the mixture takes the boil, add the flour and continue stirring until you get a thick sauce. Remove from heat and add the Maraschino.
The sauce can be conserved in the fridge as the common jam. We advise you to leave it repose overnight before tasting, so that all the ingredients blend harmoniously.
The cream can also be offered as an accompaniment to a hard cheese such as pecorino: definitely an original alternative to the classic jam or honey!
