Wine: Chianti Superiore D.O.C.G.
Grapes: Sangiovese 80%, Merlot 10%, Cabernet 5%, Malvasia Chardonnay 5%
Harvest: By hand Vinification: Controlled alcoholic fermentation at 20-25°C in stainless steel tanks, with automatics pumping over and punching down of the cap. At least 18 days of maceration on the lees. Malolactic fermentation.
Ageing: 12 months in 45 hectoliter barrels of French oak, 6 months in stainless steel
Sensory profile: It’s a limpid wine with a crystalline ruby color with some beautiful purple highlights. The fragrance is composed by a floral bouquet of red and white dried flowers followed by cherries and raspberries jam. It ends with a balsamic note of rhubarb and rosemary. The wine is semi-dry, rather warm and soft, but at the same time characterized by a good freshness and mineral salts. It is intense, persistent in mouth and with elegant tannins.
Suggestions: It is a wine for special occasions and important dinner. It could be paired with lasagne or red grilled meat.
